Project area located in Chom Mhok Mountain, is an excellent resource of natural mineral water which is spread over an Arabica coffee plantation. The coffee plantation is surrounded with natural forest which is the habitat of wild civets. Since cool weather and proper height, mineral water condensed to the sea of mineral fog cover all the area. Therefore the area has gotten moisture form the sea of mineral fog.

Coffee

We plant well Arabica varieties as Typica and Bourbon in the natural mineral water resource. We do caring coffee trees as well, cultivate by specialist team who are expert in field of mineral water agriculture. Planting with organic method and do not use chemicals that harmful to humans and animals.

The project area is at drainage zone. There is a source of weathered rocks from the mountaintop. When it rains, the minerals and nutrients are dissolved out into fertilize for the coffee trees. Moreover, they have slowly maturing that gives more time to absorb nutrients. Our coffee trees are more health.

According to well Arabica types, shade grown, the right cooling air, slowly ripe, fertility soil and more than that they are planted in natural mineral water source, therefore our coffee beans are excellent in aroma and flavour.

Production

We select only perfectly ripe coffee cherries by hand picking. Mineral water used in every production process, since watching and imperfect culling before producing with the privy recipe. Drying the beans at the hilltop of mountain where was surrounded with fresh air and adequate sunlight until properly dry. Therefor they passed to properly aging process with unique technic, then leading to hulling and grading before roasting.

Cup Test

When the aging have done, the coffee beans leaded to roast and cup test by proficient Q Grader. Then become a mineral coffee, rich in aroma and fluent in taste that is the uniqueness of MINERAL COFFEE.

Natural Civet

We had an experimental study about ‘how to make perfect civet coffee’ by cultured in farm system to looking for the factors of the best quality coffee production. When the experiment had done, we got the knowledge and released civets back into the natural forest for naturally living and reproducing to increase amount in natural environment.

As soon as the coffee cherries ripe, it is tempting aroma and flavor of wild civets. So they persuade went out together to taste on the ripest and finest coffee cherries.
